DULUTH, MN-- During the pandemic, a lot of restaurants have been struggling however, a new pop-up restaurant is coming soon to Duluth.
Hotbox Duluth will be housed in the Zeitgeist kitchen. Zeitgeist has been for rent since it temporarily closed last year.
Hotbox will offer to-go "kid's meals for adults" such as cheesy hash browns, deep-fried pickle roll-ups, and Swedish meatballs.
For the owner and chef of Hotbox Rob Abrahamson, he views this as a great way to test the waters for a possible future brick and mortar location.
"I know so many restaurants, so many other business owners are having such a hard time and it's weird to like start something during this but, it just worked out so perfect for me. I've been waiting for this opportunity for 15-20 years now, so I'm just going to go for it." said Abrahamson.
Hotbox hopes to be open for take-out meals Wednesdays and Saturdays by the end of the month.
